Concept
Kobe beef grilled in a charcoal-fired hearth furnace
A special hearth oven fired with Kishu Binchotan charcoal. Far-infrared rays slowly cook the food all the way to the core, creating a savory char on the surface while locking in melt-in-your-mouth juices on the inside. To gauge the exact moment it is done, the chef continues a dialogue with the charcoal from behind the counter.
The thickness of the meat, the marbling of the fat, the temperature of the day—no two cuts are ever alike. That is why we approach the cooking process from scratch every single time, crafting each dish down to the resting time. Enjoy the aroma unique to a charcoal-fired hearth kiln, something you will find at neither a yakiniku restaurant nor a teppanyaki grill.
Paired with wines carefully selected one by one by our sommelier. We suggest a glass that complements the sweet fat of Kobe beef, matched to the dish of the day.About wine
Kobe Beef
What is the difference between Kobe beef and Tajima beef?
Kobe beef and Tajima beef are often confused, but they are not names for the same cattle. At our restaurant, we explain these differences while serving each cut with the optimal level of cooking.
from Hyogo PrefectureTajima beefAmong them, being an uncalved heifer or a steer, indicating the degree of marblingBMS value of No. 6 or higherand the yield grade, which indicates the percentage of the edible portion,A and B ranksand a carcass weight of 499.9 kg or less—only those that meet all of these criteria are certified as "Kobe Beef." Certified cattle are given an individual identification number and are distributed through registered stores designated by the Kobe Beef Marketing and Distribution Promotion Association. What we serve is a specially selected cut chosen from among the cattle that meet those criteria.View courses
hand-selected female beef cattle
Fine marbling and fat that melts in your mouth. Valuing the delicate aroma unique to female cattle, we carefully select only the individual cows considered special selections even among A5-grade beef.
Kishu Binchotan furnace kiln
The surface is crisped all at once using high-temperature far-infrared radiation, and the residual heat is used to cook it slowly through. Infused with the aroma of charcoal, this is a grilling method unique to this restaurant.
Monthly featured branded Wagyu beef
We also offer carefully selected branded Wagyu beef that changes monthly, such as Matsusaka beef, Miyazaki beef, and Saga beef. Enjoy comparing them to experience the unique characteristics of each region.
